It never hurts to try...

Watermelon Jelly that is!
So, there are a lot of watermelons around and they're cheap!  So, since not everyone in my family likes to eat fresh watermelon, I have been trying to figure out what to do with extra watermelon!
I found a recipe here that seemed easily cut in half or less so I could just make a jar or so to try it out!
This is the result of the first try!
It turned out very runny and even after cooling a while it wasn't setting up and looked more like syrup.  I don't have any jars for regular canning right now so I really wanted it to set up quickly so we could eat it now and not have to wait!

I found another recipe here that when I looked at it the second time I realized it called for just the amount of pureed watermelon that I used in the first recipe!
I should have realized that if I'd read correctly the first time!
So, since the first batch hadn't set and didn't look like it was going to anytime soon I poured it back into the pan and added the rest of the ingredients that the second version called for (a Tbs of lemon juice, some more sugar and a load more pectin)

Not only did I end up with fuller jars, it seems to be setting already!!  I love the color and the thought of watermelon jelly on homemade bread sounds so good!
Ethan, who usually doesn't eat watermelon loved the flavor so we'll see how it is when it finally sets and we can try it on some yummy homemade bread!
